The History Behind Lindores Abbey

Origin and development

The original Lindores Abbey was founded in 1191 by David, Earl of Huntingdon. It was here that Friar John Cor, a monk at the Abbey, made the first recorded aqua vitae (water of life) in Scotland in 1494, as documented in the Exchequer Rolls of King James IV.

After centuries of dormancy following the Scottish Reformation, the modern Lindores Abbey Distillery was established in 2017 by Drew and Helen McKenzie Smith, custodians of the abbey lands. Their vision was to resurrect whisky production on this hallowed ground and honor the site’s remarkable place in distilling history.

The people behind

Drew McKenzie Smith, a direct descendant of the land’s owners, along with his wife Helen, are the driving forces behind revitalizing whisky production at Lindores. Their passion for preserving this historical legacy while creating exceptional whisky permeates every aspect of the operation.

Master Distiller Gary Haggart brings decades of industry experience to the project, ensuring that the spirits produced respect both tradition and modern quality standards.

The Craft and Production

From raw material to finished product

Lindores Abbey sources locally grown barley from the fertile fields of Fife whenever possible, honoring their commitment to terroir and sustainability. The distillery employs a combination of modern efficiency and traditional techniques in their production process.

The distillation takes place in custom-designed copper pot stills, shaped to create the specific flavor profile the team seeks. These stills, coupled with a slow, careful distillation process, help create a spirit that is both complex and approachable.

Maturation and aging

The new-make spirit from Lindores Abbey is matured in a carefully selected range of casks, including ex-bourbon, ex-sherry, and wine casks. The team also experiments with more unusual cask types, including those that might have been used in the time of Friar John Cor.

The distillery’s warehouse, with its specific microclimate, contributes significantly to the maturation process, allowing the whisky to develop its characteristic depth and complexity at a pace that honors tradition rather than rushing to market.
